Simple to make and accessible from most home gardens, this recipe is a quick pick and prepare. The sweet explosions of vine ripened cherry tomatoes, soft creamy mozzarella cheese and the irreplaceable aroma of freshly picked basil combine to make the perfect bite.
Serve as an appetizer while entertaining guests or use it to contribute to a summer “pot luck”. As simple as it is, it adds a flair of pleasing color and flavor and is welcomed every time we offer it.
- Marinated (or fresh) mozzarella balls, halved
- Cherry tomatoes (can be replaced with wedges of larger tomatoes)
- Fresh basil leaves
- Salt and pepper (optional)
- Using your toothpick, spear half of one mozzarella ball, one basil leaf, and one cherry tomato. If using fresh mozzarella, salt and pepper to taste. Repeat until desired number of bites are made. Serve.
